Spring Bikini Bowl

SERVES 2

INGREDIENTS:

FOR THE BASE:

1 Cup Pearl Barley, cooked

Dash of Apple Cider Vinegar

*Zest of Half a Lemon

FOR THE TOPPINGS:

2 Radishes, Thinly Sliced

1 Asparagus Bunch, Stems Trimmed

1 TBLS Sesame Seeds

2-3 TBLS Pomegranate Seeds

Handful of Spinach & Rocket

Handful of Chopped Roasted Walnuts

Mint Leaves (torn)

S&P, to taste

Drizzle of Tzatziki

 

METHOD:

  1. Prepare the pearl barley as per packet instructions, once ready, add the vinegar and lemon zest and set aside.

  2. Pan fry the asparagus and sesame seeds in olive oil, season with S&P and cook until charred slightly.

  3. Fill bowls with barley and toppings, drizzle with tzatziki & enjoy!
