Crispy Savoury Pancakes

SERVES 4

INGREDIENTS:

2 1/2 Cups Plain All Purpose Flour

2 1/2 Cups Water

1/2 tsp. Salt

1/2 Cup Shallots (thinly sliced)

1/2 Cup Red Onion (finely diced)

1/2 TBLS of Sesame Oil

1/2 TBLS Tamari

3 Ice Cubes

S&P (season to taste)

TO SERVE:

A Squeeze of Lime

 

METHOD:

1. In a stainless steel mixing bowl, whisk the flour, water, tamari and sesame oil together.

2. Fold through red onion and shallots, and season with S&P. Add the ice cubes to keep the batter cold, as this will make the pancakes crispier).

3. Heat a shallow layer of oil in a medium-large non stick fry pan over a high heat, ladle pancake batter into the pan but be careful not to over crowd the pan, cook each pancake for about 2 minutes on each side or until a golden brown.

4. Transfer to a plate lined with paper towel, and blot with extra paper towel to remove excess oil.

5. Serve immediately with a dash of salt and a squeeze of lime.
