Pulled Pork Roasting Tray

SERVES 4
INGREDIENTS:

4 Serves Smokey BBQ Pulled Pork, (Defrosted)

2 Red Onions, Quartered

1 Red Capsicum, Quartered

1 Green Capsicum, Quartered

1 Cup Green Peas, Steamed

500g Pumpkin, 4cm Cubed

1 Cup of Pearl Barley, Cooked

FOR THE DRESSING:

1 TBLS Allspice, Ground

1 tsp Paprika, Ground

1 tsp Cumin, Ground

2 tsp Nutmeg, Ground

6 Shallots, Chopped

1/3 Cup of Apple Cider Vinegar

4 Cloves Garlic, Skin Removed

3 TBLS Coconut Oil

Juice of 3 Limes

S&P To Taste

 

METHOD:

  1. Preheat oven to 180°C.

  2. Steam green peas in a pot of salted water until cooked, remove from heat, strain and set aside.

  3. Combine all dressing ingredients in a small blender or food processor and blitz until all combined.

  4. Throw all Vegetables except peas into a mixing bowl, pour over dressing and toss until vegetables are coated. For a more intense flavour, refrigerate for a couple of hours.

  5. Place Roasting tray in the oven, cook for around 30 minutes or until vegetables are slightly charred.

  6. Whilst the roasting tray still has 10 – 15 minutes to go, prepare your pearl barley as per packet instructions. Once cooked, rinse and strain.

  7. Remove roasting tray from oven, add peas and pearl barley and toss to combine. Serve
