Turkey Meatballs & Pan Fried Broccolini

SERVES 2 
INGREDIENTS:

2 Serves Turkey Meatballs

1 Bunch Broccolini

1/4 Red Onion (finely sliced)

2 Garlic Cloves, (crushed)

5 TBLS Olive or Coconut Oil

S&P (season to taste)

*Squeeze of Lemon Juice

 

METHOD:

1. Heat 2 TBLS of oil in a non stick fry pan, and seal off meatballs so they are browned all over, reduce heat and cover pan with lid, simmer until

2. Heat remaining oil in a non-stick fry pan, once hot throw in onion & garlic and Sautee until fragrant.

3. Add Broccolini and fry until cooked, season with S&P and a squeeze of lemon juice.
