Lemon Pea Smash w/Feta on Toast

Serves 4

INGREDIENTS:

1 Cup Frozen Peas (thawed)

1/2 Garlic Clove (crushed)

1 1/2 TBLS Olive Oil

1 TBLS Chives (chopped)

1/2 TBLS Lemon Zest

1/2 TBLS Lemon Juice

S&P (season to taste)

To Serve:

2 Slices Toasted Bread (your choice, I like rye or sourdough)

*2 tsp. Danish Feta or Feta Sheese (crumbled)

 

METHOD:

1. Combine Garlic, 1/2 TBLS olive oil, 1/4 cup water and peas in a small saucepan, and cook over a medium heat for 2 minutes or until peas are tender.

2. Drain, and reserve liquid.

3. Using a fork or food processor, mash or blitz until a thick paste forms, transfer to a mixing bowl and add the chives, lemon juice, lemon zest, and 1 TBLS olive oil.

4. Stir in a little of reserved liquid until mash is still thick but easy to spread. Season with S&P.

5. Spread on toast and sprinkle with feta
