Turkish Delight Chia Pudding

SERVES 4

INGREDIENTS:

125 g Fresh Strawberries (tops removed)

250ml Coconut Water

100ml Coconut Milk (full cream)

1-2 tsp. Rose Water

1/3 Cup of Chia Seeds

¼ Cup of Shredded Coconut

TO SERVE:

Fresh Strawberries

1-2 TBLS of Coconut Yoghurt

Pistachios (crushed)

1-2 Squares of Mint Dark Chocolate (I prefer loving earth or alter eco)

 

METHOD:

  1. Blitz the strawberries, coconut water, coconut milk and rose water together in a blender or small food processor. If you don’t own either, you can mash the strawberries with a fork & just combine the other wet ingredients.

  2. Place the chia seeds and coconut into a mixing bowl or airtight container, cover with wet mixture and stir to combine & distribute ingredients evenly.

  3. Cover and allow setting in the fridge overnight or at least 2 hours.

  4. Divide mixture between bowls or 250ml containers and enjoy with your favourite toppings.
