Wonton Noodle Soup
SERVES 4
INGREDIENTS:
24 Wontons ( Original Recipe, Vegan Recipe )
1L Chicken or Vegetable Stock
2 tsp. Ginger (finely grated)
3 TBLS Tamari
1 tsp. Sesame Oil
100g Pack Vermicelli Noodles
1/2 Red Onion (finely sliced)
1-Cup Snow pea Sprouts
1 Red Chilli (finely sliced)
*300g Chinese Broccoli
* 2 Shallots (finely sliced)
METHOD:
1. Steam wontons in steaming basket or microwave until defrosted and cooked all the way through (about 10 minutes)
2. In a large pot, bring chicken broth to the boil, reduce heat and add ginger, tamari & sesame oil, simmer for 10 minutes.
3. Meanwhile, place vermicelli noodles in a heatproof bowl and cover with boiling water for 5 minutes or until cooked, strain, and divide into bowls.
4. Divide wontons, and the rest of the ingredients among each bowl and cover with chicken broth.
