2 MEALS IN 1: Turkey San Choy Bau & Wontons
Makes 24 Wontons & San Choy Bau for 4ppl
INGREDIENTS
1KG Turkey Mince
8 Shiitake Mushrooms (finely diced)
4 Shallots (finely chopped)
30cm Ginger (minced/finely grated)
1 Bunch Coriander Root Only (finely chopped)
2 TBLS Tamari
2 tsp. Shaoxing Wine
1 TBLS of Sesame Oil
250g Wonton Wrappers
METHOD:
1. Combine all ingredients in a large mixing bowl, and mix through with your hands until thoroughly combined.
2. Divide the mixture in two, and cling wrap or place the 1st mixture into an airtight container and store in the freezer.
3. Roll a teaspoon size of the mixture into small sized meatballs, and spoon into the center of each wonton wrapper.
4. Wet your fingertips and run them along the edges of the wonton wrapper, bring all four corners together at the center and twist until wonton is sealed, repeat this until mixture is used up, store in an long airtight container, in a single layer, and store in the freezer.
