So you’ve seen cheggs pop up in most of my recipes and you are wondering what the bleep they are?
Enter the humble Chegg (chia egg) my favourite egg substitute that will help you to bind
ingredients together. The same can be achieved with flax meal if you don’t have chia seeds laying about.
The following ratio is what I use, but you can add extra water if
you find the chegg too thick.
1 EGG = 1 TBLS Ground Chia Seed mixed with 3 TBLS Water
Whisk to mixture briefly with a fork and then allow it to sit for 5 minutes so it congeals, give it a quick whisk and then add it to whatever you are cooking with!
