Ginger & Lime Chia Pudding

SERVES 2

INGREDIENTS:

1 Cup of Chia Seeds

1 tsp. Ginger (grated)

¾ Cup Cocoquench (coconut & rice milk blend)

1 ½ Cups of Coconut Water

1 TBLS of Rice Malt Syrup

Zest & Juice of 1 Lime

TO SERVE:

Peach, sliced

*Coconut Yoghurt

METHOD:

  1. Combine all ingredients except peaches and coconut yoghurt together in a mixing bowl or container.

  2. Cover and place in the fridge to set for at least 30 minutes.

  3. Serve topped with fresh peaches and yoghurt. Mixture will last for up to 7 days covered in the fridge.
