Ginger & Lime Chia Pudding
SERVES 2
INGREDIENTS:
1 Cup of Chia Seeds
1 tsp. Ginger (grated)
¾ Cup Cocoquench (coconut & rice milk blend)
1 ½ Cups of Coconut Water
1 TBLS of Rice Malt Syrup
Zest & Juice of 1 Lime
TO SERVE:
Peach, sliced
*Coconut Yoghurt
METHOD:
Combine all ingredients except peaches and coconut yoghurt together in a mixing bowl or container.
Cover and place in the fridge to set for at least 30 minutes.
Serve topped with fresh peaches and yoghurt. Mixture will last for up to 7 days covered in the fridge.
