Makes enough for 2 meals
INGREDIENTS:
1kg Beef Mince
2 Brown Onions (finely diced)
6 Cloves Garlic (crushed)
2 TBLS Cumin (ground)
4 tsp. Smoked Paprika
1 Bay Leaf
2 Long Red Chillies (finely diced)
1 800g Tinned Tomato (crushed or diced)
4 TBLS Olive Oil
500g Cherry Tomatoes (halved)
*2 Limes (quartered)
S&P (season to taste)
METHOD:
1. Heat Oil in a large heavy based fry pan over a high heat.
2. Saute the onion and garlic for 4 minutes or until clear, add the mince, and break up using wooden spoon, cook evenly for roughly 4-6 minutes or until browned.
3. Add all remaining ingredient except for lime and cherry tomatoes, and then bring to a simmer.
4. Add lime and cherry tomatoes, and allow to simmer for 12 – 18 minutes or until mince has absorbed most of the liquids.
5. Remove lime, and divide mixture into 2 airtight containers, allow cooling completely before storing in the freezer.
