Feta Sheese

MAKES A SMALL TUB

Ingredients:

1 Cup Coconut, shredded

1/3 Cup Hemp Seeds

1/2 Cup of Water

2 tsps. Rosemary, dried

1 tsp. Sea Salt

1 TBLS Nutritional Yeast

2 TBLS Lemon Juice

1 1/2 TBLS Olive Oil

Method:

1. Combine the coconut, hemp and water together in a small bowl, and cover

with cling wrap or a lid. Place in the fridge overnight.

2. Preheat oven to 200°C.

3. Throw the coconut, hemp, water, nutritional yeast, lemon juice, 1 TBLS of

the oil and 1/2 tsp of the salt into a blender, and blitz until a smooth and

creamy consistency is formed.

4. Pour mixture into small ceramic ramekins. sprinkle with rosemary,

remaining oil and sea salt and place in the oven to bake for 25-30 minutes or

until golden on top.

5. Remove from oven, and crumble with a fork or hands. Allow cooling

completely before storing in an airtight container in the fridge.
