Earth Bikini Bowl

SERVES 2

INGREDIENTS:
FOR THE BASE:

1 Cup Brown Rice & Quinoa, cooked

2 TBLS Tamari

FOR THE TOPPINGS:

1 Shallot, Thinly Sliced

1 Red Onion, Thinly Sliced (raw or cooked)

1 Broccolini Bunch, Stems Trimmed

1 TBLS Dukkah

1/4 tsp. Chilli Flakes

Handful of Spinach & Rocket

500g Pumpkin, Diced

1 – 2 TBLS of Curry Powder

Handful of Chopped Roasted Almonds

Coriander Leaves (torn)

*Drizzle of Tahini

 

METHOD:

  1. Prepare the brown rice & quinoa as per packet instructions, once ready, add the tamari and set aside.

  2. Boil the pumpkin until it is soft enough to mash, add the curry powder & either sesame oil or butter to taste.

  3. Pan the broccolini in olive oil, add the chilli flakes and dukkah and cook until charred slightly.

  4. Fill bowls with rice and toppings, drizzle with tahini & enjoy!
