Pumpkin Satay Chicken Rice Paper Rolls

SERVES 4 
INGREDIENTS:

1 Roast Chook (shredded)
or Chicken Stock Chicken (shredded)

1 Cup Pumpkin Satay

1 Carrot (thinly sliced)

1/2 Red Onion (Thinly sliced)

1/2 Cucumber (Thinly sliced)

1/4 tub Snow pea Sprouts

1/4 Bunch Coriander

100g Pack Vermicelli Noodles

1 Pack Rice Paper Rounds

*Sriracha or Sweet Chilli Sauce

 

METHOD:

1. Coat the shredded chicken in the pumpkin satay

2. Place vermicelli noodles in a heatproof bowl and cover with boiling water for 5 minutes or until cooked, strain, run cold water over noodles so they aren’t warm and place in a bowl

3. Fill a large heatproof bowl with warm water (for rice paper rounds), and follow instructions on back of pack
4. Add all fillings & sauces, roll and enjoy!
