Mexican Beef & Bean Tacos

SERVES 4 
INGREDIENTS:

500g Mexican Mince (fully defrosted)

400g Red Kidney Beans (rinsed & drained)

12 Taco Shells

1 Whole Portion Salsamole

1/2-Cup Coriander Leaves

*200g Sour Cream

*1-2 Cups Mozzarella Cheese (grated)

*1 Lime Quartered

 

METHOD:

1. Heat oil in a large heavy based fry pan over a high heat, add defrosted Mexican mix and kidney beans, simmer until completely warmed through.

2. Heat Tortilla rounds, and lay out all remaining ingredients for everyone to build their own taco.

3. Fill tortillas with beef & bean mix, salsamole, sour cream, cheese, coriander and a squeeze of lime.
