Vegan Chilli Con Carne

SERVES 3
INGREDIENTS:
1 Cup of Celery (finely diced)
1 Cup of Carrot (finely diced)
1 Cup of Walnuts (roughly chopped)
1 Cup of Fresh Tomatoes (finely chopped)
½ Cup of Sundried Tomatoes (finely chopped)
1 TBLS Cayenne Pepper (ground)
1 tsp. Cumin (ground)
S&P (season to taste)
TO SERVE
*Coriander Leaves (torn)
*Coconut Yoghurt/Cashew Cheese
*Nutritional Yeast Flakes

METHOD:

  1. Blitz walnuts, fresh and sundried tomatoes in a blender or small food processor for around 20 seconds.

  2. Add carrot and celery to a large mixing bowl cover with tomato walnut mixture; add spices and season with salt and pepper to taste. Mix until all ingredients are combined well.

  3. Serve with yoghurt, cashew cheese, fresh coriander and a sprinkle of nutritional yeast flakes.
